The project focuses on the area of circular economy with the aim of developing innovative technologies and products from the waste produced from the pomace in the production of wine, as well as hulls and brans in the mill processing of cereal grains (oats, spelt, buckwheat). The innovative use of the bio-wastes will be aimed at the creation of food and non-food products with high added value. Non-food applications will include composite materials (nanofibrous packaging and construction materials). Food applications will combine separated pomace components (seed, husk, stalk) with baking and pasta production to increase the nutritional quality of flours, their mineral fortification and natural stabilisation, or the use of grain hulls to prepare substrates for the fungi cultivation.
